Mike Riviard, a student at Quinsigamond Community College, was providing samples of his original recipe for a Honeydew, Cucumber, and Mint Cooler at the Mobile Farmers Market's stop at the Senior Center today. His delicious and healthy recipe was developed as a part of a class, and he was able to share it with our customers today. Don't worry! Honeydew, Cucumber, and Mint Cooler:
1 Honeydew melon (about 4 pounds) peeled and chopped
1 English cucumber, thinly sliced, reserve 6-8 slices for garnish
1 Cup fresh mint leaves
1 16oz bottle, 100% apple juice, no sugar added
Blend the melon, chopped cucumber, and mint in a blender until smooth. Pour into a large pitcher. Stir in the apple juice. Chill 30 minutes or up to 12 hours. Stir well before serving. Serve over ice, and garnish with cucumber slices.
